映夏红茶 Summer Shimmer Black Tea
铁观音滋味醇爽,最能衬托鳌虾原本的鲜甜口感。使用铁观音冲泡的茶水腌制鲜虾,再以铁观音浅熏虾肉以确保虾肉更好地锁住茶香。秘制面糊裹挟弹滑的虾肉炸制酥香,浇淋蜂蜜腐乳汁,并点缀醋珠,满口酥香茶韵。
Mellow Tieguanyin oolong tea brings out the flavour of sweet shrimp. The shrimp are both marinated and smoked in the tea for full flavour, then deep fried until crispy. Served with honey milk and vinegar to complement the tea's complex aroma.
这道菜主厨选用了甜醇浓厚的映夏红茶来搭配鸭胸肉。低温慢煮的方式可以最大程度保证肉质爽嫩细腻。煸炒过红茶的清油慢煎鸭肉,让鸭肉慢慢吸收红茶的香气。鲜橙与红茶是不可多得的绝佳搭档,喷枪燎过的橙子更是香气四溢,酸甜的滋味不仅能解油腻,同时能激发红茶的香甜。
Low temperature keeps the duck tender in this pan-fried dish that showcases BASAO's Summer Shimmer black tea and its intoxicating floral, ripe peach aroma. Fresh orange pairs well with the black tea's energetic personality, with sweet and sour notes that balances the duck's rich flavour.
蜜香乌龙滋味甜润,最适合搭配香气馥郁的牛腹肉。蜜香乌龙做成的秘制酱汁腌制澳洲和牛腹肉,清新的茶香沁入到牛肉细腻的肌肉纹理之中,炸制酥香的茶叶与经过20分钟低温慢烤的鲜嫩肉质,依靠彼此的独特口感和香气,形成让人欲罢不能的独特魅力。而后在牛腹肉中包裹春卷脆皮和苹果肉,点缀清香的香椿苗,入口齿颊留香。
Seaside honey oolong tea has a sweet flavour and is best suited to beef belly. First marinated in the tea, Australian beef belly is then slow roasted until the crispy tea leaves contrast with the tender meat. Wrapped in a crispy spring roll with fresh apple for an unforgettable bite.
