叱咤饮料届的几巨头，

谁能更胜一筹？

无论是口感的丰富，还是制作技艺的精巧，当属茶为最。

茶叶的发酵程度不同，

滋味也各有千秋。

红茶经过完全发酵，口感醇厚，回味悠久；

绿茶往往不经发酵，气味天然、清香爽口；

如果既想体验红茶的浓郁，又想留住绿茶的清爽，

半发酵的乌龙茶无疑是最佳选择。

相传在清朝雍正年间，

福建省安溪县的一名茶农在采茶时，

看到了一头肥美的山獐。

一心想品尝野味的他，

不顾身背的茶篓，就去追捕那山獐。

满载而归后，他更是把制茶抛之脑后，直到第二天才想起来。

神奇的是，

茶叶在篓里经过剧烈的摇动，又加上一夜的搁置，

竟散发出独特的芬芳，

冲泡起来味醇甘厚，又无苦涩，别有一番风味。

这两道颇具“乌龙”色彩的制茶工序一直传承至今，

被称为摇青和凉青。

“摇动”与“静置”反复交替，

茶叶的边缘先得到发酵，

呈现出“绿叶红镶边”的奇特现象，

也带来了乌龙茶独特的韵味。

要品最正宗的乌龙茶，还要到福建安溪去。

乌龙茶制作技艺目前已被列入国家级非物质文化遗产名录，

凝结着匠心精神的安溪茶从此焕发蓬勃生机。

依靠特色茶产业，

安溪县也实现了从“贫困县”到“全国百强县”的华丽转身，

更是获得了“中国茶都”的美誉。

unique craftsmanship fumigates the great soul of tea

What is the world’s most consumed beverage, not counting water?

Coffee? Coke?

No. 

It’s tea!

A tea leaf starts to oxidize as soon as it is plucked. 

Black teas are fully oxidized; 

green teas are swiftly processed with almost no oxidization. 

Between rich blacks and herby greens,

a complex and intriguing semi-oxidized Chinese tea has an elegant throne of its own. It is called the oolong tea.

About 300 years ago, 

a tea planter in Southeast China’s Anxi County suddenly started to hunt an animal while plucking tea leaves. 

He ran after the animal with a basket of tea leaves on his back. 

Focusing on the animal, 

he forgot to process the tea that day. 

Surprisingly, 

the next day, 

he found that the tea leaves gave off a fascinating aroma after being “neglected” and being “shaken” and “wounded”.

A new method of processing tea is thus developed.

Nowadays, 

the fully-developed craftsmanship of making oolong tea contains over a dozen steps, among which the essential ones include withering and bruising.

As the leaves being tossed, the outer rim begins to brown, 

as this part is the first to be oxidized. 

So “green leave with a red rim” is a key feature of the semi-oxidized oolong tea.

Today, 

with the government’s support on preserving and developing intangible cultural heritage, 

the once impoverished Anxi County in Southeast China’s Fujian province has been lifted out of poverty, 

developing a modern tea industry.

As China’s tea capital, 

Anxi is making the world’s best varieties of oolong tea.
