Creamy Cauliflower soup

食材
INGREDIENTS
花椰菜 约300克
300 g cauliflower
燕麦片 30克
30g oat flakes
干鹰嘴豆 30克
30g dried chickpeas*
土豆 1个
One potato *
腰果 3-5个
3-5 cashew nuts*
胡椒粉 少许
½ teaspoon ground pepper
岩盐 少许
¼ teaspoon ground rock salt
肉蔻粉 少许
A tip of a teaspoon ground nutmeg
|*| 鹰嘴豆、土豆和腰果皆是可选
|*| chickpeas, potato, and cashew nuts are optional
做法
INSTRUCTIONS
1. 鹰嘴豆和腰果需要提前浸泡大约8个小时。
1. Soak the dried chickpeas and cashews about 8 hours in advance.
2. 鹰嘴豆加入两倍的水煮熟,放在一边备用。
2. Boil the chickpeas with twice as much water, then set aside.
3. 土豆切丁。
3. Dice the potato.
4. 土豆丁和腰果一起加入一个大锅加少许水(水没过食物即可)小火煮十分钟。
4. Add diced potatoes and cashew nuts in a large pot and add enough water to cover the potatoes then cook over low heat for ten minutes.
5. 花椰菜洗净切块,入锅和土豆一起煮熟。
5. Wash the cauliflower and cut it into pieces, then add it to the pot and simmer over low heat until the cauliflower and the potatoes are very tender.
6. 煮熟后加入燕麦片和熟鹰嘴豆。用手持料理棒搅拌。
6. Add oat flakes and cooked chickpeas. Use an immersion blender to purée the soup until smooth and creamy.
7. 最后加入盐、胡椒粉和肉蔻粉(注意肉蔻粉味道比较重,只需要加入少许)调味搅拌,再稍微加热便可享用。
7. Add salt, pepper and a tip of a teaspoon of ground nutmeg as needed and enjoy!
