How to Manage the COVID-19 Infection in Canteens?




今天我们非常荣幸,邀请到来自广州市疾病预防控制中心副主任、新闻发言人张周斌先生和我们一起来讲解一下。

Today it is our honor to invite Mr. Zhoubin ZHANG, deputy director and spokesman of Guangzhou CDC, to explain this to us.



壹- 问答时间 -

问:食堂在特殊时期应该对它的硬件进行哪些改善?


Q:How to improve the facilities of the canteens in this special time?


答:首先我想是加强通风。如果是不具备良好通风条件的食堂,我们应当加装风扇来改善它的通风条件,同时我们要配备足够的水龙头,还有相应的洗手液。如果有条件,我们可以在入门的地方,加装一个固定的体温监测仪,来进行一个体温的监测。一旦发现有员工体温异常,就不允许他进入食堂就餐。


A:The first thing that comes to my mind is to increase ventilation. Install extraction fans in poorly ventilated canteens. Ensure the availability of proper handwashing facilities including faucets and liquid soap. If the conditions permit, a fixed temperature detector can be installed at the entrance to the canteen to help accurately spot people with abnormal temperatures. Those with abnormal temperatures are not allowed to enter the canteen.

:那么集体食堂管理要做到哪些防疫措施呢?


Q:What preventive and control measures should be implemented in the canteens?


答:首先对这个食堂而言,所有的服务人员要做到健康上岗。第二我们所有使用的餐具,我们必须进行严格的消毒。第三我们所有的就餐人员要避免聚餐,我们要提倡错峰就餐,分区就餐。


A:Firstly, the canteen staff must be healthy. Secondly, the tableware must be strictly disinfected. Thirdly, the workers should avoid having meals together at the same time. Dining at off-peak hours and in different areas is recommended.

问:员工集体用餐怎么做最规范呢?

Q:What is the right way to have meals in the canteens?


答:现在提倡一个比较有意思的就餐方式,叫考试性就餐。就像在考场一样的,我们尽量做到单人单桌,同时不得交谈,最重要的是我们在就餐前,一定要记得洗手。

A:We recommend a very interesting way to have meals, i.e. to have meals as if having exams. Like in an examination room, only one person can be seated at each table and no conversation is allowed. It’s also very important to wash hands before eating.

肆- 问答时间 -

:集体食堂近期有什么饮食禁忌吗?


Q:Is there any food to be avoided in the canteens recently?


:饮食上没有什么禁忌,但是我们要做到:营养均衡、荤素搭配、不杀活禽、不吃野味。


A:No. We should eat a balanced diet with meats and vegetables. The slaughtering of live poultry (in the canteens) is forbidden. We should not eat wild animals.

问:食堂的餐具用哪种消毒方式比较安全呢?


Q: Which is the safest way to disinfect the tableware in the canteens?


:食堂的餐具消毒一般有两种方法。一种是物理消毒,比如我们可以用蒸汽消毒,用紫外线进行消毒。化学消毒的话可以用臭氧进行消毒,还可以使用含氯的消毒液来浸泡消毒。但是无论使用哪种方式,我们都要严格按照操作规范来进行消毒。


A:There are two ways to do that. One is physical disinfection, e.g. steam sterilization and ultraviolet disinfection. Another is chemical disinfection, e.g. ozone disinfection and disinfection with chlorine-containing disinfectants by soaking. We should strictly follow the manufacturers’ instructions for both ways.

问:食堂卫生环境消毒应该怎么做,有什么禁忌吗?


Q: How to carry out environmental disinfection in the canteens? Are there any don’ts to avoid?


答:大范围的地面消毒,我们可以用含氯的消毒液,进行喷洒式的消毒;对于桌面、门把手这些物体的表面,我们可以用含氯的消毒液,进行一个擦拭的消毒。要避免使用酒精喷雾的消毒,那么这个可能会引起严重的消防隐患。特别要强调一下,酒精的消毒通常是用于我们手部和皮肤的消毒,不适合用作大规模的喷洒消毒,消毒的效果也是达不到要求的。对于我们个人而言,具体消毒的人员,我们应当做好个人的防护,同时正确使用消毒产品,不要过度消毒。


A: Large areas of ground should be disinfected by spraying with chlorine-containing disinfectants. The surfaces of the tables and the doorknobs should be disinfected by wiping with chlorine-containing disinfectants. Disinfection with alcohol by spraying should be avoided since it has hidden danger of fire. It should be noted that alcohol is suitable for hand and skin disinfection but not for large scale disinfection by spraying. The latter cannot meet the disinfection requirements. The persons who carry out the disinfection should pay attention to self-protection, use disinfectants correctly and avoid excessive disinfection unnecessary in epidemic control.

柒- 问答时间 -

问:企业可以给员工提供哪些预防的药品或者饮品吗?


Q:Are there any medicines or soft drinks that enterprises can provide for their workers to prevent COVID-19?


答:实际上我们对这个没有特殊要求,那么我希望企业给我们职工灌输健康四大基石的这个理念:合理膳食、适量运动、戒烟限酒、心理平衡。


A:There is no such requirement. I hope the enterprises can disseminate the concept of ‘Four Pillars of Health’ to the workers, i.e. healthy diet, moderate exercise, smoking cessation and alcohol restriction, and psychological balance.
