Sliced boiled chicken was originated from folk of Leshan in the Qing Dynasty, famous in Sichuan, and it was also known as Chinese prickly ash and pepper chicken. In history, national leaders such as Zhu De and Deng Xiaoping loved it very much, and Guo Moruo, the writer of generation, also mentioned this Sichuan cuisine many times.
白斩鸡起源于清代的四川乐山民间,盛行于四川,同时也以“椒麻鸡”闻名。历史上,许多国家领导人如朱德和邓小平都对这道菜爱不释手,一代文豪郭沫若也曾多次提及这道菜肴。

Bean noodles is a kind of local specialty snacks in Chongqing. It is made from peas and miso sauce, with onion, ginger and garlic as accessories. The total taste is lubricated, and the softness of peas, the sweetness of the savory and miso sauce are quite memorable.
豌杂面归属于重庆面的一种,是重庆的一种地方特色小吃,以豌豆与杂酱为主料,配以葱姜蒜为辅料制作而成,口感润滑,豌豆的软糯与面条的劲道以及杂酱的香甜,令人回味无穷。

This cusine is called twice-boiled meat, because the first time you cook it, you just make it boiled and eatable. And the second time you cook it,you add some seasonings like shallot, garlic, pepper and fermented soya beans. When you add these things to it, it will become colourful, seemingly pleasant and very delicious to eat.
这道菜名为“回锅肉”,得名源于第一次烹饪时只需煮熟肉质,第二次烹饪时再加入香葱,大蒜,胡椒和豆瓣炒制。当加入这些佐料后,整道菜便会显得色彩斑斓,看起来十分美味诱人。

Boiled fish, also known as river water boiled river fish and boiled fish fillets, was first popular in Cuiyun Township, Yubei District in Chongqing. It is usually made from fresh grass carp, bean sprouts, and chili. "Oily but not greasy, spicy but not dry, and the meat is smooth and tender" are its special features.
水煮鱼也称为江水煮江鱼、水煮鱼片,最早流行于重庆市渝北区翠云乡。它通常由新鲜草鱼、豆芽、辣椒等食材制作而成。“油而不腻、辣而不燥、肉质滑嫩”是其特色。
