西兰花浓汤
Creamy Broccoli Soup (Vegan)

INGREDIENTS
100克 西兰花
100g broccoli
100克 新鲜豌豆
100g peas
100克 熟鹰嘴豆
(或50克生鹰嘴豆50克)
100g cooked chickpeas
(that’s about 50g raw)
30克 燕麦片
30g oat flakes
3-4颗 腰果
(腰果提前浸泡大约8个小时)
3-4 cashews
(soaked overnight)
少许 胡椒粉
A bit of ground pepper
3勺 营养酵母
3Spoons Nutritional yeast
1 勺 松茸鲜蔬粉*
(或香菇粉*/蔬菜粉)
1 Spoon mushroom seasoning*
(or vegetable seasoning*)
*无五辛
*(no onion or garlic)

做法
INSTRUCTIONS
1. 花椰菜洗净切块能;
Wash the cauliflower and cut it into pieces.
2. 西兰花、豌豆和腰果一起加入一个大锅加适量的水煮熟;
Add cauliflower,peas, and cashews into a pot and boil with some water until all ingredients are very tender.
3. 煮熟后加入燕麦片和熟鹰嘴豆煮两三分钟,然后关火;
Add oat flakes and cooked chickpeas cook for another 2-3 minutes then turn of heat.
4. 用手持料理棒搅拌;
Use an immersion blender to purée the soup until smooth and creamy.
5. 最后加入松茸鲜蔬粉(或香菇粉/蔬菜粉)、营养酵母、和少许胡椒粉调味搅拌;
Add mushroom or vegetable seasoning ,nutritional yeast and a bit of pepper to season.
6. 开中火煮1-2分钟便可享用。
Turn on medium heat and simmer until thickened, only 1-2 minutes more and enjoy!
其实我以前不爱吃蔬菜。吃素后慢慢发现食物本来的美味,爱上了吃全蔬食。不过仍偏爱某些蔬菜。有些菜其实也需要通过添加香料和调料进行烹饪或通过食材互相的配合才更可口。
Actually, as a child I didn't like vegetables at all. After becoming vegan, I realized the original delicious taste of plants and fell in love with eating plant based whole foods. However, I still have some veggies I like more and some I like less. Sometimes after adding spices and seasonings or through the combination of different foods these veggies become more tastier.
比如,我本来不喜欢花菜,不过做成许多食谱尤其是花菜浓汤后,我倒是很喜欢吃这个菜,甚至一个月内做了十几次,连续吃了几天都吃不腻。
For example, I didn't like cauliflower very much, but I made many recipes using cauliflower, that are very tasty, especially the creamy cauliflower soup. I even like this cauliflower soup so much that I made it about ten times in a month, and I didn't get tired of eating it day to day for several days.
同样今天跟大家分享的西兰花浓汤也是如此,原来不是很喜欢西兰花,但做成浓汤真的很好吃。
It's the same with the Broccoli Soup I share with you today. I didn't like broccoli very much before, but this recipe is really delicious.
有个小秘诀窍门:
Here's some little tips:
平时煮蔬菜拌浓汤当酱很好吃。
Using creamy soups as a dip(sauce) on top of your veggies they become much more.
可以用豆子和麦片加蔬菜打成浓汤(浓度越高越接近泥状越好吃)拌菜、拌面吃都不错。
You can make a creamy soup with beans, oat flakes and vegetables (the creamier, the more delicious it is), then you can eat it as a dip like sauce with vegetables or noodles.
