自制纯素“酸奶”揭秘方法大全(收藏版)self made vegan yogurt methods

小编从小习惯喝酸奶,但开始素食后了解到奶制品不管对身体,还是环境和动物都有负面影响。

其实,用植物性食材可以做出更美味更健康的纯素酸奶。

I have eaten yogurt ever since I was a child, but after I started to be a vegan, I learned that dairy products have many negative effects on the body, the environment and for the animals.

We can easily make more delicious and healthier vegan yogurt.



我用了半年多的时间来研究纯素酸奶,也尝试了不同制作方法。今天给大家分享各种不同的方法,相信每个人都可以找到适合自己的方法。

In the recent months I researched information about vegan yogurt, and also tried different production methods. Today, I'd like to share various methods to of making vegan yogurt. I hope you can find a suitable method for yourself.




自制纯素酸奶方法1:酸奶菌粉+豆浆

Method 1: Yogurt starter culture + soymilk

 

纯素酸奶食材:

Ingredients:


酸奶菌粉*+豆浆**

yogurt starter culture + soymilk

 

*市场上很多酸奶菌粉是从奶制品中提取的,所以选择酸奶菌粉要非常注意确认是植物性提取的酸奶菌粉。

(文末原文给大家分享微店链接,里面可以找到纯素酸奶菌粉)。

*Many normal yogurt starter cultures are extracted from dairy products, so we should pay great attention to the selection of our yogurt starter culture, and confirm that it is a plant-based yogurt starter culture.

自制纯素酸奶加甜菜根果昔

**可以自己做豆浆也可以用植物奶、豆浆粉、椰子粉。

用黑豆、黑米、红豆、腰果、杏仁,椰浆、其它植物奶等做纯素酸奶都可以。

 

**You can make your own soymilk, or you can use plant milk, soymilk powder or coconut powder. If you make your own plant-based milk you can use black beans, black rice, red beans, cashew nuts, almonds, coconut.

纯素酸奶制作步骤:

Instructions:


1.   用豆浆机做浓度高一点的豆浆,喜欢口感细腻一点可以用细筛过滤,不过我个人感觉没有过滤的也很好吃。

Prepare soymilk with. If you want the texture of the yogurt to be smoother you can first filter the soymilk, but I personally think it's also delicious without filtering.

 

2.凉至和手温差不多时,取一小杯豆浆加入菌粉搅拌均匀然后倒入剩下的豆浆,再次搅拌均匀。

When the temperature is about the same as hand temperature, take a small cup of soybean milk, add the yogurt starter culture and stir well, then pour in the rest of the soymilk and stir well again.

 

3. 将豆浆乳酸菌溶液倒入酸奶机中发酵(8-12小时)即可。

3.Use a yoghurt maker and ferment 8-12 h.  

 

 

如果没有酸奶机也可以用电饭锅:将电饭煲内装入不烫手的温水,放入豆浆乳酸菌溶液盖上盖子过一夜即可;冬季需将电饭煲调至保温状态,容器下面垫厚毛巾(避免直接对容器加热,否则乳酸菌会被杀死)放置一夜即可。发酵的温度一般在40-42度左右。

If you don’t have a yoghurt maker you can also use a rice cooker: Add some warm water in the rice cooker with, put in the pot with the  yogurt, cover it and leave it overnight; (avoid heating the container directly, otherwise the bacteria will be killed).

The temperature of fermentation is about 32-42 ℃.

 

自己做的纯素酸奶可以保留一小部分可以用于下一次的发酵。

You can keep a small part of your vegan yogurt for making your next yogurt.

 


自制纯素酸奶方法2:发酵糙米

Method 2: brown rice

 

纯素酸奶食材:

Ingredients:

 

200ml豆浆、一大勺糙米(可发芽的)

200ml soybean milk, 1 tablespoon brown rice (which can be sprouted)

 

纯素酸奶制作步骤:

Instructions:


1.  先把糙米洗净,擦干。

2.  将所有器具煮沸、消毒、晾干。

3.  将糙米放入容器中,随后倒入60ml豆浆。

4.  将盛有材料的容器放置在阴凉的地方,静置一晚。如果室内温度低,时间则需延长,直到凝固为止。

5.  豆浆糙米混合物凝固后,再次加入60ml豆浆,继续静置8小时直到凝固。

6.  凝固后,第三次加入80ml豆浆,同样静置到凝固,菌种即完成!

7.  取一勺自制菌种,放入已消毒的容器中,加入300ml豆浆。

8.  将容器放到阴凉处,静置大约8个小时直至凝固。


1. Wash and dry the brown rice first.

2. Boil, disinfect and dry all appliances.

3. Put the brown rice into the container, and then pour in 60ml soymilk.

4. Put the container in a dark place and let it stand for one night. If the indoor temperature is low, the time should be extended until it solidifies.

5. After the mixture of soymilk and brown rice is solidified, add another 60 ml soymilk, and let it stand for another 8 hours until it is solidified.

6. After coagulation, add 80ml soybean milk for the third time, and let it stand until coagulation, then your self-made yogurt starter is finished! You can use this for making yogurt now.

7. Take a spoonful of this self-made bacteria, put it into a sterilized container, and add 300ml of soybean milk.

8. Put the container in a dark place and let it stand for about 8 hours until it solidifies.

 


其实,一开始制作菌种会感觉耗时又麻烦,不过一旦第一次菌种做好,以后就可以用这个菌种来自制纯素酸奶!您只需将制作完成的酸奶保留一小部分就可以用于下一次的发酵。

Initially, this method is time-consuming and troublesome to make the self-made yogurt starter, but once it is created for the first time, you can use it for your self-made yogurt in the future! You only need to keep a small part of the finished yogurt for the next fermentation.



自制纯素酸奶方法3:回春水

Method 3: rejuvenating water

 

纯素酸奶食材:

Ingredients:


豆浆300ml,回春水2汤勺,玻璃罐。

soymilk 300ml, rejuvenating water 2 tbsp, glass jar.

纯素酸奶制作步骤:

Instructions:


1.将所有器具煮沸、消毒、晾干。

2. 先倒入2汤勺回春水;

3. 再倒入300ml豆浆。

4. 玻璃罐上面最好留一些空间,让发酵呼吸;

5. 盖上盖子,放在通风干燥阴暗处。24小时后,豆浆就已经变稠变酸了;

6. 喜欢酸一点的,就多发酵一会,喜欢不那么酸的,就少发酵一点时间.

 

1. Boil, disinfect and dry all appliances.

2. Pour in 2 tbsp rejuvenating water* first;

3. Add 300 ml soybean milk.

4. It's better to leave some space on the top of the glass jar to let it breathe during fermentation;

5. Close the lid and put it in a dry and dark place. After 24 hours, soymilk has become thick and sour;

6. If you like it sourer, ferment a little longer; if you prefere it less sour, ferment a little less;

 

(rejuvenating water*)

1. Wash the rice well and soak it overnight in a glass jar with a sprouting lid, .

2. The next day, dump the soaking water and give the rice a quick rinse. Place the jar in a container to catch the excess water, cover it with a kitchen towel and let it sprout. Note: From my experience, it takes about 2 nights for brown rice to sprout, but only a night for whole barley and whole wheat.

3. When the rice sprouts, rinse well. Add filtered water and let it ferment. You can see some bubbles right after the first night. The bubbly water is rejuvelac. You can use it now, but from my experience, letting it ferment for 2 nights makes it fizzier and tastier to drink.


 

同上可以将一小部分做完的的纯素酸奶保留用于下一次的发酵。

Again, you can keep a small part of your vegan yogurt for making your next yogurt.

 


以上方法确实稍微麻烦一点,不过平时比较忙的朋友可以选择另一种非常简单方便的自制纯素酸奶方法。

The methods above might be a bit troublesome, but busier friends can choose another very simple and convenient method of making homemade plain yogurt.

自制纯素酸奶方法4:祝你轻安植物性酸奶粉

Method 4: vegan yogurt powder

 

纯素酸奶食材:

Ingredients:


一包祝你轻安植物性酸奶粉(102克),250克常温水(低于43℃)

A pack of vegan yogurt powder t (102G), 250g of water (below 43 ℃)


纯素酸奶制作步骤:

Instructions:



1、打开干粉料包加水搅拌均匀;

2、放入酸奶机发酵8-12个小时。


1.Put the dry powder into the container add water and mix well;

2. Put into a yoghurt maker and ferment for 8-12 hours.

 


酸奶吃法:

How to eat yogurt:


吃酸奶可以配上各种自己喜欢的水果、坚果、麦片。

酸奶配蓝莓汁或其它果汁、果酱(纯素)也都很不错。

另外,也可以将酸奶与甜菜根粉/甜菜根汁/甜菜根蔬昔搅拌均匀吃。

也可以用来做饭,或用来做沙拉酱。

 

You can it with all kinds of fruits, nuts and cereal of your choise.

The yogurt can also be served with blueberry juice or other juices, jam (vegan).

In addition, you can also eat the yogurt together with beetroot powder/ beetroot smoothie.

It can also be used for cooking, or for salad dressing.
